Cost Controller

Description

We are looking for an experienced Cost Controller to monitor and control hotel costs, particularly Food & Beverage expenses. The successful candidate will analyze purchasing, inventory, consumption, wastage, and operational costs to ensure profitability and compliance with company procedures.

Key Responsibilities
Monitor daily Food & Beverage costs and operational expenses.
Prepare daily, weekly, and monthly cost-control reports.
Monitor food, beverage, and other inventory levels.
Conduct regular physical stock counts and reconcile inventory with system records.
Analyze food and beverage consumption, wastage, spoilage, and variances.
Calculate food and beverage costs and gross profit margins.
Review purchase orders, receiving records, invoices, and stock issues.
Verify that goods received match approved purchase orders and invoices.
Monitor portion control and recipe costs.
Maintain and update recipe costing and menu costing.
Investigate cost variances and report unusual discrepancies to management.
Coordinate with Purchasing, Stores, Kitchen, F&B, and Finance departments.
Assist with budgeting, forecasting, and financial analysis.
Ensure compliance with hotel financial policies and internal controls.
Support internal and external audits when required.
